Every once in a while we like to throw in a blog post that is just for fun, so our next couple of posts we are going to talk about something a little different. You know how every so often people at work will host a pot luck. We do that here at Central Comm.
It brings us together to share our families favorite recipes. We eat, we share, and we bond. It makes long hours sitting in front of a screen, one the phone, a little more fun. Not that we don’t enjoy our jobs, we do. But a break in the routine is nice every few months.
Autumn is a great time to connect and communicate with friends and family. And, what better way than to have a potluck dinner! We, at Central Communications, would like to share one of our favorite potluck recipes.
2 lbs. red potatoes
1/3 green pepper/1/3 red pepper/1/3 yellow pepper (cut into small pieces or minced)
1 cucumber (cut into quartered pieces)
½ cup of red onion (sliced)
8 oz. Feta cheese (crumbled)
1 large lemon (juiced)
½ cup of Italian salad dressing or ¼ cup olive oil with 1 tbsp. vinegar
Salt/pepper (to taste)
3 Pita breads (cut into wedges)
Boil a large pot of salted water and add the red potatoes. Cook for approximately fifteen minutes or until tender but firm. Drain and rinse with cool water. When completely cooled, chop the potatoes into small pieces or small wedges. Combine the cut potatoes, peppers, cucumber, red onion slices and cheese in a large bowl. Mix the lemon juice, salad dressing (or olive oil mixture), salt and pepper and pour over the potato salad. Gently toss the ingredients. Spoon the salad into a pita wedge or onto a platter with all of your favorites from your potluck dinner and enjoy!
